Forget banana bread, everyone is making pancake cereals on Instagram and here's how

What you'll need:

Ingredients

  • 1/2 cup all purpose flour

  • 1 tbsp sugar

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup buttermilk (or milk)

  • 1.5 tbsp whisked egg

  • Oil to grease the pan

Method

  1. In a bowl, whisk together the flour, baking powder, baking soda, and sugar.

  2. Then add the whisked egg and buttermilk to the bowl, gently combine with a fork, being careful not to over mix, but mixing out all the large lumps

  3. Pour the pancake batter into a squeeze bottle or ziplock bag with a tiny corner cut off. If you don't have either of these, you can use a teaspoon to scoop it out.

  4. Heat a non-stick pan with oil over over medium-low heat.

  5. Squeeze out mini pancake (or drop the batter by the teaspoon) and cook them until they start to bubble. When you flip them, they should be golden brown. Continue cooking for up to a minute, or until they are golden brown.

  6. Scoop the pancakes out into a bowl and serve with your choice of topping; from butter and maple syrup to chocolate sprinkles and crushed cereal.
